In housemade damascus san mai with a Blue No.2 core and cladding forged from 15b20 and refined wrought iron, this 213mm funiyuki style chef knife by Robert Trimarchi of The.Nine is a daily workhorse in a wonderful size. At 6.6oz / 188g the weight is on the light side of average for a blade this size, and with a balance point about one inch in front of the handle this knife will not tire you out no matter how much cooking is on the schedule, and you will surely not tire of chopping, slicing, mincing and dicing with it. The ziricote octagonal wa-style handle is tapered toward the front and extremely comfortable in the hand. A handmade tulip wood saya with ziricote pin is included.
