Simple in design, extremely comfortable in the hand and built for hard daily use, Dan Prendergast's integral chef knives including this Leadwood Integral 246mm are workhorse tools for any kitchen with convex bevels, long, gently rocking European profiles and hard, sharp edges. The forged Bohler K510 steel, produced by the Austrian mill Bohler-Uddeholm, is Dan's clean high carbon steel of choice and works wonderfully with his in-house heat treatment and full distal tapers. On the thicker side behind the edge and weighted for long hours in the kitchen, an incredible knife for demanding cutting tasks. The leadwood is dense and excellent for chef knives, nicely carved by Dan for exceeding comfort no matter how much cooking is left to do.

The Story

A bladesmith for over a decade, based in Gloucestershire Cotswolds in south central England , Dan's extensive and eclectic background in metalwork, which has included making piano pedal springs, copper hop boilers as well as ironwork conservation and restoration for Kensington Palace and Canterbury Cathedral, gives him the knowledge, perspective and experience to create culinary tools whose simple beauty is derived from a focus placed squarely on function and time honored, traditional techniques.
