Panga Panga Integral Chef 230mm

With deep bevels, convex ground down from the wide spine of Dan Prendergast's integral bolster construction, this 230mm / 9.05" chef knife in panga panga wood has a beautiful distal taper that slims from over 4mm above the maker's mark to just 1.3mm an inch from the tip. A classic European blade profile, this particular knife from Dan is slightly shorter at 46mm tall at the choil, and more aggressive than some, and also slightly lighter at 7.8oz / 220g, making it an excellent slicing knife among other things. Just enough curvature to the edge means you won't want to put it down, whether slicing proteins or chopping and julienning vegetables. Dan's knives are made to be work-horses of the kitchen, heat treated and tempered by Dan to 60HRC and with enough meat behind the edge for the most demanding tasks.

The Story

Dan's extensive background in metalwork, which has included making piano pedal springs, copper hop boilers as well as ironwork conservation and restoration for Kensington Palace and Canterbury Cathedral, gives him the knowledge, perspective and experience to create culinary tools whose simple beauty is derived from a focus placed squarely on function and time honored, traditional techniques. Forging, heat treating, tempering, carving and finishing each piece by hand in his central England workshop, Dan creates each element of each cutting tool himself by hand.
