A bit of flex in the 225mm blade and a razor sharp, thin edge make this a versatile every day chef knife that will excell in precision cuts, long slices and detail work. Bryan's work continues to evolve and this knife is just the latest in his outstanding portfolio of one-of-a-kind knives created by hand in his small shop in central France. Locally sourced oak, burnt on the surface for longevity, is shaped and tapered in a wa-style pattern to make the handle.
