Mustard & Cocobolo Medium French

The classic Medium French Chef by Don Carlos Andrade is an everyday go-to kitchen knife with a tall profile that thins to a fine tip for ultimate versatility. Shaped from 3mm-wide 52100 carbon steel with a full distal taper, the blades stand out with 'snowflake pattern' forced mustard patinas, pairing beautifully with the full-figured, old growth cocobolo wood, contoured in Don's fantastic rendition of a wa-style partial tang handle. The 135mm / 5.4" blades feature a convex grind and sharp, thin edge with plenty of stiffness at the spine for the most demanding tasks. Balanced just behind the front of the handle, this is a fast, thin knife tall enough for any chopping task and just the right size for kitchens large and small. A cloth-covered protective case is included.

*Note: Three knives in this configuration were crafted in January 2018 and each is virtually identical with the exception of the individual pieces of wood used for the handles.
