James Oatley has an eye for style and a feel for function, there is no doubt. A true laser of a chef knife, the s-ground 12c27 stainless blade tapers beautifully from a mere 1.87mm above the choil to 0.72mm an inch from the tip, providing plenty of lateral flexibility (but not too much) and a feather-like weight of 6.4oz for a full-size chef knife. Carved from stabilized maple in James' frequently seen and quite comfortable handle shape, a polished steel bolster matches beautifully with the polished edge of the blade, contrasting the maple like the blade edge contrasts the stonewashed bevels. A handmade pine saya is included.
