An outstanding every-day prep knife from Bryan Raquin, this 200mm / 7.87" gyuto is tall with ample strength for demanding cuts and chopping tasks, while offering just enough flex further up towards the tip to allow for precise carving and slicing motions. Quenched in water, Bryan depends on the 1.45sc ("super-clean") carbon steel that he has used almost exclusively for years as the core of his homemade san mai, with wrought iron sourced locally for the cladding. Oak, also sourced near his home in the Auvergne region of central France, receives a burn finish to provide longevity and is carved to a simple, beautiful and slightly tapered wa shape.

Bryan Raquin's focus on the grain structure of his house-made san mai steels, water quenching for optimal edge performance, and edge geometry for daily use, results in stunning custom chef knives that are kitchen workhorses above all else.
