Handmade in Kyoto, Japan by Alexander Bazes, this nimai (two-layer) kiridashi kitchen utility knife offers a 50mm edge of Hitachi White No.2, perfect for any number of detail-oriented food prep tasks. Forged at his one-man shop, Alex has created a beautifully balanced and finely finished traditional Japanese tool, complete with magnetic, carved wooden saya for secure storage. Note: This 50mm kiridashi is the larger knife in the group photos.

The Story

Originally from Westchester County, New York, Alexander Bazes has been living and working outside of Tokyo, Japan, training under master bladesmiths from Tokyo and Osaka at every opportunity while honing his own techniques at his small, one-man shop. A dedicated craftsman focused on mastering each subtlety of an ancient craft, Alexander's work is continually evolving and we could not be more impressed by the work he is producing today.
