The 450-layer ladder pattern damascus forged from W2 and 15N20 carbon steels by Isaiah Shroeder in his latest one-of-a-kind chef knife is both elegant and versatile, but one of the stunning components comprising the Starwood Damascus Gyuto. A bolster of mokume, fossilized mammoth tooth and amber, with brass spacers, is fitted to a gorgeous piece of starwood, the handle tapering slightly toward the front and rounded and polished at every edge. The friction-fit saya is handmade from poplar wood and completes an already extraordinary package.

The Story

A talented designer, craftsman and bladesmith, Isaiah Schroeder of Isaiah Schroeder Knifeworks creates custom culinary tools at his shop in Madison, Wisconsin. Isaiah has grown his craft over the years and followed his passion for kitchen wares by making his own damascus, his own sole-authorship chef knives and moribashi plating chopsticks, even stabilizing his favorite woods in-house. We're proud to represent Isaiah's work here on Eatingtools.
