Spalted Birch Santoku 140mm

No detail is overlooked in this honyaki santoku handmade in Madison, Wisconsin by Isaiah Schroeder.  The 140mm / 5.51" blade in 1095 carbon steel boasts a stunning hamon with silky, etched, hand-sanded satin finish that culminates at a wildly sharp and thin edge. The handle of orange spalted birch with a vein of spalted tamarind tapers gently from a subtly angled back with contoured edges to a bolster section made of copper, turquoise & red box elder. A custom made saya is included.

The Story

A talented designer, craftsman and bladesmith, Isaiah Schroeder of Isaiah Schroeder Knifeworks created custom culinary tools at his shop in Madison, Wisconsin. Having entered the cutlery market several years ago making extraordinary custom wa-style handles and sayas for Japanese chef knives, Isaiah has grown his craft and followed his passion for kitchen wares by making his own damascus, his own sole-authorship chef knives and moribashi plating chopsticks. We're proud to represent Isaiah's work here on Eatingtools.
