At 115mm / 6.3" the 1095 carbon steel edge measures at the long range for a paring knife while providing enough height and curvature for all variety of cutting tasks. The blade's head-turning sauerkraut forced patina flows beautifully into the striped pattern of the ebonized maple handle and its three brass pins.
