Maple SG2 Stainless Gyuto 185mm

As strikingly beautiful as it is versatile and usable in kitchens large or small, this 185mm / 7.28" custom chef knife from James Oatley features a 50mm tall rocking profile and strong yet thin tip. The thin, sharp edge is backed by strength for tougher cuts, stiff yet quite a bit slimmer than a workhorse and just sturdier than a laser, with very subtle S-grind geometry. The SG2 steel core, also known as Super Gold Powder Steel, is stainless, as is the 15-layer nickel and stainless ladder pattern damascus cladding. A dyed, stabilized maple handle with carbon fiber spacer in James' usual long, comfortable and nicely contoured handle matches the accompanying saya.

Based in St. Leonards, Australia, James Oatley uses a variety of techniques and materials to produce heirloom-quality kitchen cutlery one at a time at his one-man studio.
