Standing 59mm tall with a 210mm / 8.27” razor sharp edge, this S-grind chef knife, handmade in Sydney, Australia by James Oatley, is simply superb. In SG2 san mai, the blade provides unmatched versatility and ease of use in kitchens large and small, the stiff spine tapering to an especially thin edge and needle-like tip, helping it to excel at both brisk chopping and precise, detail cuts. The SG2 steel core, also known as Super Gold Powder Steel, is stainless, as is the beautifully polished 15-layer nickel and stainless ladder pattern damascus cladding. Dyed, stabilized maple with a thin carbon fiber spacer forms the long, comfortable and balanced handle. A custom maple saya is included.

Based in St. Leonards, Australia, James Oatley uses a variety of techniques and materials to produce heirloom-quality kitchen cutlery one at a time at his one-man studio. James holds himself to the highest of standards, resulting in what many consider to be works of art, each knife built to last generations while standing up to the demands of any kitchen.
