Lignum Vitae Gyuto 215mm
Balanced at the heel, long, slim and razor-sharp, this one-of-a-kind gyuto by bladesmith Alexander Bazes has a unique and extraordinary feel in the hand, fast and light, yet strong and purposeful. Mid-height bevels slim to a very thin geometry behind the edge, which lies just below the bright, thin layer of pure nickel that separates the Hitachi White No.1 carbon steel core from the stainless cladding that is finished using traditional Japanese techniques to bring out the banding, not often seen in a knives of similar construction. Trained for a decade in Kyoto, Alexander creates incredible tools that are as simply elegant as they are functional, made for daily use in kitchens small and large. This knife features an Argentine lignum vitae handle with hand-hammered copper ferrule and single copper pin.
