Versatile in style, striking in design, and supremely utilitarian in construction, this one-of-a-kind custom chef knife by bladesmith Gregg Cimms is dressed to a tee and guaranteed to get people talking. High-polished stainless cladding reveals a core of beautiful, 300-layer homemade carbon damascus to form the 205mm / 8" san mai blade, crafted to do it all in the kitchen, the Japanese-inspired gyuto blade shape offering a relatively straight, hard, and sharp edge below convex bevels that offer enough strength and weight to tackle the more demanding tasks of daily meal prep. To push and pull the blade through each ingredient, a handle of stabilized and dyed Hawaiian mango wood is fitted with spacers of carbon fiber, silver, and G10, and shaped into a comfortable, tapered, and faceted octagonal handle.

A former fine-dining chef of ten years. Gregg Cimms of GC Knives began his knifemaking journey in pursuit of crafting the world's finest chef knives, driven by a desire to create exemplary versions of the tools he most enjoyed using during his time in the kitchen. Gregg's laser-like focus and uncompromising standards for quality and performance lead to stunning, one-of-a-kind culinary tools, each of which is a piece of art made to pass down through generations of cooks. With a studio in New York's Hudson Valley, every elements of each knife is made by hand by Gregg himself.
