K&T Paring Knife - One
The three-layer San Mai used for the blade is handmade, like the knife itself, by Bryan Raquin. This one-of-a-kind forged paring knife is guaranteed to a be the go-to tool for small tasks in your kitchen. The edge and center layer of the blade is water quenched to a hardness of approximately 63/64 HRC. Where it meets the soft steel jackets, salvaged from a 250+ year old French cathedral, a subtle welding line is created, producing a wonderful two-tone look. Just 700kg of the extremely clean and sought after 145sc high-carbon steel used for the edge was produced by Raquin's friend and colleague in Germany, and is now gone. The handle is hand-contoured by Bryan from beautiful vintage micarta, circa 1980.

The Story
Raquin's work speaks for itself. Owner of Kiridashi & Tools, Bryan designs and forges a variety of small, utilitarian knives for the kitchen and outdoors, employing carbon steel forged to shape in his shop in France. His rustic look and use of natural handle materials, as well as beautifully aged vintage micarta as seen in this knife, create a look and feel that is unmistakably his.
