The Story

Don Carlos attended culinary school in Los Angeles, taught stone carving at a local school, and has been sculpting brass, stone, and other materials for over 20 years. Since 2006 he has shifted his focus to chef knives, apprenticing initially with master metalsmith Tai Goo. Since then Don has been building extraordinary, one-of-a-kind chef knives, each created with "goodness and meditative intention," in his words. We would agree those qualities shine through in each knife he forges using traditional techniques and hand tools. Stay tuned for more work from Don Carlos.
